As the snow was falling outside, I started craving pancakes. I wanted something sweet but also something that would feel warm inside! Pancakes were my answer to that, don’t ask why because I have no idea!?!
I used my Ginger Pancakes recipe as a base for this recipe. As with most recipes, all you need is a base recipe to start with then it’s all about creating something tasty from there!

Banana Blueberry Pancakes
Ingredients
- 2 Cups Baking Mix
- 1 1/3 Cup Milk
- 1 Egg
- 1 Tbsp Applesauce
- 1/2 Cup Mashed Banana
- 1/2 Cup Frozen Blueberries
Instructions
- Begin by mixing the milk, egg, applesauce, bananas and blueberries while whisking in the baking mix.
- Then, in a skillet set on medium heat begin pouring 1/4 cupfuls. You will want to cook these on one side until it begins to bubble then flip and cook on the other side. This recipe made 8 pancakes.
I topped these with a little whipped cream, sliced bananas, and maple syrup. My son and I enjoyed these while we watched the snow fall from the back windows.
YUM! i too am making blueberry pancakes today, got the shaker ones for less then $.50 a piece at the store 2 weeks ago and had to stock up!
Will definately keep your recipe though at hand! i think the kids would use less syrup with all the fruit mixed in
