Today’s recipe comes to us from Pepper at PepperScraps.com, and it is sure to be delicious! I am so excited to share this recipe with you for a variety of reasons one is that I have very few avocado recipes on my site. There is a good reason for this, I’m allergic to them! I found that out the hard way, but I know many of you love avocado. This recipe is perfect for lunch or dinner!
Avocado Egg Salad
The perfect spring dish: egg salad served with asparagus! After eating a lot of egg salad after Easter (as I’m sure you did too) I wanted to mix it up a little and try something different. I glanced in my fridge and saw the avocado for yesterday’s dinner that I ended up not making (Kristy is not the only mommy who hates cooking). Not wanting to let it go to waste I decided to add the avocado to my egg salad.
Oh, I’m so glad I did! Yum!
This would also be a great recipe for light sandwiches at a party, too, I will be adding this to my party Pinterest Board to use next time I have a party.

Avocado Egg Salad
Ingredients
- 1 egg hard boiled
- 1/2 medium avocado
- 1 tablespoon light mayonnaise
- 1 slice light bread I use killer dave's light bread 75 cal
- 1 tablespoon Parmesan cheese shredded
- 1/4 teaspoon paprika
- 1/4 teaspoon cumin
- pepper and salt to taste
Instructions
- 1. Slice egg and avocado (or use a hand chopper)
- 2. Mix mayo and spices into egg and avocado
- 3. Toast bread
- 4. Pour egg mixture on top of bread and sprinkle with Parmesan cheese
- Servings: 1 | Calories: 312 | Fat: 21 | Carbohydrate: 22 | Fiber: 9 | Protein: 14

FYI: My current favorite way to cook asparagus is to just through it in the frying pan, sprayed with olive oil cooking spray and cook until it turns bright green. So easy and not mushy like you remember it as a kid.
