Breakfast time has been such a rush lately, has it been for anyone else? Of course, it’s a bit hectic trying to get out the door for school, but before the time changed, my kids were always up early and ready to go. They also had a great way of waking me up too, but then the time changed. Now, it’s still dark at almost 7am and they are sleeping in! What? I know, right? I can’t complain though, I love it but it makes the mornings chaotic because we have to get out the door early. It also makes me crave summer, when I can actually let them sleep in. In the midst of the breakfast rush, I still need them to have a filling breakfast. It is definitely the most important meal of the day and shortly after breakfast I’m usually working out, so I need a good breakfast too. I make a big batch of it on Sunday and then we have it throughout the week. My husband is typically running out the door with an Egg & Cheese Sandwich in one hand and this Yogurt Fruit Salad in the other, of course his coffee is in there too!
The Egg & Cheese Sandwich is essentially like eating an omelet wrapped in a delicious pita pocket. It’s a combination of a nice fluffy egg and topped with a slice of American cheese. Yogurt Fruit Salad
Ingredients
- 2 Cups Strawberries Sliced
- 1 Cup Blueberries
- 1 Cup Raspberries
- 1 Cup Mixed Berry Greek Yogurt
- 1 Tbsp Honey
- Oats for Topping
Instructions
- Combine the fruit, yogurt, and honey.
- Top with oats before serving.
