Slow Cooker Taco Soup is a great way to do dinner in a pinch!

It’s official, we have made it through our first week of school! Both of my kids started school this week, my daughter of course isn’t going as much as my son yet, but the break has been nice. Although, we have been in back to school mode, dinner is still a must!
One thing I’ve learned over the years is that it’s best to plan ahead for dinner otherwise I slip into just going for take out, which can add up quickly if you aren’t careful! In order to get ahead, I always cook meat ahead of time that I can use in various meals throughout the week.
This past week, I tried out the Honeysuckle White Bone-in Turkey Breast. I actually made this on Sunday afternoon, simply cooked it in the oven. Then, I shredded up the turkey to use throughout the week in a variety of meals. It works just the same as other proteins that you can make in advance and use throughout the week in meals. We opted to use it in this Slow Cooker Taco Soup.
This recipe is a favorite in our home and my son requested it weekly, so I thought I would surprise him with it as he headed back to school. Turkey is such a great lean meat and Honeysuckle White turkeys are raised without GMOs. They come in a variety of offerings such as ground sausage, burgers, and tenderloins.

I decided to roast the turkey in the oven with simply a nice coating of olive oil along with cracked pepper and sea salt. I let it roast for about 2 1/2 hours on 350*. The internal temperature needs to be at least 165*. One thing to keep in mind is cooking it slowly is how you will get that great taste and tenderness. The bone is like a built in bouillon packet that adds even more flavor.
Once I had our turkey cooked, I removed the skin and shredded it up for meals throughout the week. It freezes well too if you want to save it to use later on in the month.
This little trick of preparing meats in advance keeps my sanity intact for dinner time as we get busy with after school activities. Are you ready for a delicious dinner? Be sure to try this version of taco soup and enjoy!

Slow Cooker Taco Soup
Ingredients
- 1 lb Ground Beef
- 1 Taco Seasoning Packet or Gluten Free Taco Seasoning Packet
- 1 15 oz Can of Black Beans
- 1 14.5 oz Can of Diced Tomatoes
- 1 14.5 oz Can of Beef Broth
- 2 Cups Frozen Corn
- 1 Cup of Water
- Dash of Cayenne Pepper
Instructions
- In a skillet brown the meat and add in the taco seasoning as instructed on the package.
- Once the meat is browned, add the meat and all ingredients to the slow cooker. This will cook on low for 6 hours
