I love grilled cheese, LOVE it! I have been trying though to get my eating back in check and on a recent trip to Walmart found gluten free english muffins. I was ecstatic, or maybe more than that? I pretty much screamed in the aisle and shoved a man’s cart out of my way so I could get to the freezer that I spotted them in. They also had a ton of other gluten free products there too.
I was beyond thrilled. Why? Because then I would not have to make another trip to a special store to pick up those products! Plus, I really was craving these Open-Faced Grilled Cheese Sandwiches on an English Muffin. At first, I wondered how good these would be because the gluten free english muffins do look different than the original. I quickly realized though they taste just as good.
So if you are gluten free use the gluten free version of english muffin and if you aren’t pick your favorite type and eat up!
I decided to layer mine, with a little butter then a slice of cheese, spinach, tomato, and topped with a hardboiled egg. Next, I put them in the oven for about 10 minutes on 350* and let the cheese melt and it toasted and softened the muffin as well.
Once they were done, I was ready to eat up! They made for the perfect healthy lunch for me. I sliced them in half and then had a few halves for lunch. I love that I was able to get some protein along with veggies in my lunch.

Open-Faced Grilled Cheese with Veggies
Ingredients
- 2 English Muffins or Gluten Free English Muffins
- 4 Pieces of Cheddar Cheese
- Spinach Leaves
- Sliced Tomato
- Hard-Boiled Eggs Sliced
- Butter
Instructions
- Preheat the oven to 350*.
- On each half of the muffin, spread a little bit of butter then layer it with the cheese, spinach, tomato, and egg.
- Place them on a greased baking sheet and in the oven for 10 minutes or until the cheese melts.
- Slice and Serve.
- Makes 4 half size sandwiches.
