A great way to make a simple dinner is with this Honey Mustard Chicken.
One thing I’ve grown fond of lately is different variations of chicken including this tasty Honey Mustard Chicken. Every single day after school as soon as my son jumps in the car, he immediately ask, “What’s for dinner?” I’ve just constantly said ‘chicken’ lately and I think it’s starting to get old with my family but it’s just been my go-to on this journey of eating healthier. My entire family LOVED this Honey Mustard Chicken. My husband couldn’t help but comment on how juicy the chicken was. I decided to use boneless, skinless chicken thighs. I’ve found that even though they are a bit more calorie wise than chicken breast, they just taste so much better. They have such a great tender texture and juicy flavor.
I decided to marinate the chicken all day with a combination of a salt-free seasoning paired with Dijon mustard and a little bit of extra honey. Then, I topped them with rosemary as well, served over a bed of rice this is such a tasty dinner. They can easily be grilled indoors or outdoors too. I typically use a grill pan when I want that grilled flavor but for us we always seem to be under burn bans. I guess it’s a good thing too because we nearly lost our house to a fire over the holidays this year, so I’m thankful for those burn bans and will gladly grill indoors.
This chicken has become a go-to for us and will likely be used this summer as chicken skewers. We do chicken skewers quite a bit on the grill during the summer months. My kids love them and I can’t wait to pair them with fresh from the garden veggies. We also picked up all of our seeds for the garden this week too! It’s almost that time and I’m anxious to share it with you.

Honey Mustard Chicken
Ingredients
- 6 Boneless Skinless Chicken Thighs
- 1/4 Cup Honey Dijon Mustard
- 1 Tsp Honey
- 1 Tsp Salt-Free Seasoning Mrs. Dash Original
- 1/2 Tbsp Dried Rosemary
Instructions
- Place the chicken in a shallow dish.
- Mix together the remaining ingredients in a small bowl, then brush onto the chicken.
- When ready to cook grill on medium-high heat on both sides until well done or chicken is 165* internal temperature.
- Serve with additional rosemary.
