A delicious way to whip up a great dinner is by making this Honey Lime Grilled Chicken.
Do you ever have days where dinner gets put on hold? As in what you planned to make ends up not being what you had? That’s what happened with this dinner, but it worked out well because it was just able to marinate a little bit longer, which really enhanced the flavor.
I went on a cleaning spree a few weeks ago and ended up cleaning out our entire storage closet, but I decided to start this project just a few minutes before I needed to start dinner. I ended up telling my husband to pick up dinner on the way home that night and had to bump this to the day after. It turned out okay because it tasted great and it didn’t get wasted either, but I just hate when I get off my normal routine for dinner especially when it cost me having to go get take out. The flip side? I got that storage closet cleaned out and some of that stuff I hadn’t seen since we moved into this house, so that’s good, right? We got it down to one side of the closet has storage and now we actually have a huge space on the other side. This happens to be a closet or walkway that connects our main hallway upstairs to our bonus room, so now I have high hopes to get bookshelves in the other side and make a little reading space. It was definitely something that needed to be done.
Now, about this dinner! I decided to marinate the chicken in a Honey Lime marinade and then it soaked in for about 24 hours. This can be done in about 1-2 hours, you just may get even more flavor by letting it sit a bit longer.
Once it was done, we paired it with some garden fresh vegetables and dinner was all ready.

Honey Lime Grilled Chicken
Ingredients
- 4 Boneless Skinless Chicken Thighs
- 2 Tbsp Honey
- 1 Lime
- 1/2 Tbsp Olive Oil
- 1 Tsp Garlic Salt
Instructions
- In a small bowl, combine the honey, juice from 1 lime, olive oil, and garlic salt.
- Place the chicken in a Ziploc bag and then add in the marinade, seal and mix up well.
- Let it soak for 2-24 hours.
- Grill on medium-high heat until well done and serve.
