Although I may be very tired of all this rain we keep getting, the garden is LOVING it! Our garden is growing wonderfully this year along with the pesky grass or weeds as we like to think of it.
We have an unlimited supply of green peppers right now, which personally I love these so I am beyond happy about that. I love making Stuffed Peppers with these and adding them to meals too like these Tangy Sloppy Joes.
Next up, we have a plethora of cucumbers and squash. This year, I’m going to be brave and actually try canning some cucumbers for pickles. I know I should have been doing this years ago but never had the time to. I am making a point to make the time to can pickles. We LOVE pickles and at least by canning them I know exactly what goes into them too. Do you have any tips? I would love to hear them.
My husband is our gardener and sadly this year he just has not had the time to spend out there nearly as much as he would like. We are hoping next year is a bit less busy for us so that he can get back to the garden. This just means my son and I are out there a little bit more; however, I’ve let my fear of bugs and creepy crawlers trickle down to my son, so now if he sees a bug he won’t touch it. Bummer because I really needed him to be the brave one!
He saw a bug on that squash down there and then suddenly he would not touch anything else. This is one of those traits in myself that I really wish he did not have!
Our tomatoes are coming in strong too, can we saw salsa? Yes, lots and lots of salsa coming soon!
I also do a lot of stewing of our tomatoes to save for winter too. They come in super handy for good soups!
Along with those items, we also have green beans, green onions, and okra growing as well. I’m anxious to stock my freezer and enjoy cooking with my garden fresh goodies all year round!
Thankfully, we have not had as many issues with critters as we thought aside from our lettuce. I never seem to have much luck with lettuce!
Of course, I also had to show off my husband in this post too because he’s really the gardener behind our garden. He was busy mowing our yard which is one of ten or so that he is mowing this year…did I mention this is the hardest working man I’ve ever met? Yep, I love him.
