Grilled Rosemary Potatoes are the perfect side dish to some tasty ribs!
A few weeks ago, I mentioned that we made BBQ Ribs with Grilled Rosemary Potatoes. I thought today I would share with you how we make these. It’s so simple, really no recipe is required!
I make these ALL the time in the oven, but during the summer months they are just as easy to add to the grill. This is a simple mix of red potatoes, rosemary, olive oil, and garlic salt.
When I make these on the grill, I get a large sheet of foil, then I add the sliced potatoes, a bit of olive oil, rosemary, and garlic salt. I wrap it up tight in the foil and simply place on the grill. These generally will cook longer than the meat at least that is the case for us. I leave these on medium-high heat for about 30 minutes. Of course, you will want to check them after about 20 minutes just to be sure you do not toast them too much.
I like adding these to the grill because they are so simple to cook. They can even be made with additional veggies such as peppers, squash, onions. Back when we had our garden in the backyard, I would just go take my pick of veggies and add them to the foil pack to make a tasty fresh side dish!
