In the midst of the holidays, a delicious, light dish is perfect to mix it up a bit. I’m sharing this Greek Flatbread today in partnership with behalf of Litehouse, Inc. and Simply Artisan Reserve, all thoughts and opinions are my own.

Is it just me or during the holidays is it heavy foods overload?  Now, I’ll admit I do eat my fair share of delicious holiday foods, but I like to break it up with lighter options too that use fresh ingredients.  My husband and I recently enjoyed this Greek Flatbread, which was a delicious twist to our typical flatbread.  I was able to make the gluten-free by adapting a crust recipe to use gluten-free all-purpose flour; however, it can be made with regular flour as well.

Now, the key for us in this dish was adding the Simply Artisan Reserve™ Simple Seasons™ cheese in the Feta Cheese variety. It comes in both Feta Cheese Simple Seasons and Blue Cheese Simple Seasons and it’s in a shaker, so you can simply shake the cheese right on top of your dish.  I love this because it helps with portion control too, I topped our flatbread with the Feta Cheese Simple Seasons.  Then, you can use a variety of other toppings as well including a balsamic vinaigrette dressing to bring out all of the flavors.

Simple Seasons is actually the first finely crumbled, soft cheese that can be conveniently purchased in a shakeable jar.  It’s perfect for parties, because you can easily sit it out and let your guests use just the amount that they prefer.

Ingredients:

  • Pizza Dough or Gluten-Free Pizza Dough
  • Spinach Leaves
  • Grape Tomatoes, Halved
  • Black Olives
  • Simple Seasons Feta Cheese
  • Balsamic Vinaigrette Dressing

Directions:

  1. Preheat the oven to 400*.
  2. Roll the dough out on a floured surface into a long rectangle shape, place dough on a greased baking sheet.
  3. Bake in the oven for about 5 minutes until it's slightly toasted on the bottom.
  4. Carefully remove, top with the spinach leaves, grape tomatoes, black olives, top with cheese, and dressing.
  5. Bake for 10 minutes or until crust is fully cooked.
  6. Slice and serve.

If you are using your own dough, I use this pizza dough recipe and then use gluten-free all-purpose flour to make it.

I love this flatbread not only for a lighter addition to our menu, but also for parties over the holidays.  It’s a great option that is vegetarian too, of course you can always add meat to it, but I like to leave it with veggies.
