It’s here! Garden Fresh Fridays are here for the summer months and maybe a little longer. Each week, I will be focusing on a recipe that involves produce from the garden.
I know in my experience, we always have a plethora of garden goodies, we actually still have a freezer full from last year. That was also after giving TONS away! So, I am always on the lookout for new recipes to use my produce with. Each week I’ll be sharing a new recipe that you can use your garden produce for or for those that do not have a garden, you can use store bought produce or farmer’s market produce.
This week I am starting off with this Cucumber & Radish Salad. This salad is perfect for hot summer days to have a nice, healthy cool lunch item. It also pairs well with burgers for dinner too.
I simply used my mandolin to slice up the cucumbers into thin slices then I hand sliced radishes. I decided to hand slice those to keep my fingers intact!
Here is a little side note for you, I had to get my fingerprints done recently because I am getting my concealed to carry license. Yes, here in Oklahoma, you don’t want to mess with us. The guard doing my fingerprints ask me if I was a butcher because my fingertips had been cut so badly. I told him he was close…then I walked off thinking WOW, I am so thankful I haven’t actually lost a finger yet! They must be bad though if a prison guard comments on them.
Now, back to this salad. It’s a simple tossed salad, perfect as a side with your favorite meal.

Cucumber & Radish Salad
Ingredients
- 1 Large Cucumber Thinly Sliced
- 10 Radishes Thinly Sliced
- 2 Tbsp Olive Oil
- 1 Garlic Clove Crushed
Instructions
- Begin by slicing the veggies if you have not already.
- Place the veggies in a bowl then toss with the olive oil and garlic.
- Chill in the fridge for at least 2 hours.
