Many times after we have a taco night, the next night we do Fiesta Bowls. Basically we pile all the taco ingredients into a bowl and top it with melted cheese and salsa! For this recipe I used my Homemade Chunky Salsa recipe but this time I tossed all the ingredients into a food processor to make it thin instead of chunky.
I mentioned before I’m craving Mexican Foods, so this is just one of many to come! I love the variety with Fiesta Bowls because you can essentially use whatever ingredients that you have on hand and get a new tasty meal from it!

Fiesta Bowls
Ingredients
- 1 lb Ground Beef
- 1 Package Taco Seasoning
- 2 Cups Cooked Rice
- 1 Cup Cooked Corn
- Lettuce
- Tortilla Chips
- Salsa
- Shredded Cheese
- Other ingredients: Beans Guacamole, Black Olives, and your favorite taco toppings
Instructions
- Begin by browning the ground beef, draining, and adding in the taco seasoning as according to the package.
- Next build your bowl with all your favorite taco ingredients. Top it off with salsa and shredded cheese.
