We are just about 7 weeks into this wellness journey that my husband and I are on. I prefer to say ‘wellness’ over ‘diet’ because it isn’t a diet, it is basically changing the way we eat so that we are doing better health wise overall. One thing that has been a struggle particularly for my husband is lunch time. He is always on the road, so he needs a simple lunch that is easy to eat quickly and on the go. One of his favorites are Sandwich Bros. of Wisconsin® Chicken Melts; however, I like to be sure he’s pairing it with a great superfood to get a complete meal for lunch. I love to pair these with a Cranberry Kale Salad to make a complete meal.
Of course, these sandwiches can also be served as simply a snack especially after school for the kids, but when combined with additional vegetables, they make a great meal too. They are frozen food but they are a better-for-you sandwich option that has the lowest carb ratio. They are flatbreads stuffed with premium proteins such as 100% Angus Beef, all-white meat chicken, all-natural sausage, and of course REAL cheese. I love that they are full of protein, which helps my husband stay on point throughout the day and alert while driving too.
Now, of course a superfood just adds to the benefits when combined with the sandwich. I have a bit of a kale fetish and have really enjoyed the pairing of cranberries with kale. I decided to make this simple Cranberry Kale Salad with a homemade Poppyseed Dressing. It’s so delicious and one of those sides I can eat every single day of the week. I’m not going to confirm or deny that I actually do that, but I might. I’ve really tried to be sure that I always have a vegetable with lunch and a protein, so this is a great option. Of course, you can also add extras to the salad too if you prefer as well. I like to top it with some nuts too, which just gives another little boost of protein.

Cranberry Kale Salad
Ingredients
- 1 Bunch Kale
- Olive Oil Spray
- 1 Cup Dried Cranberries
- Toppings Pecans, Almonds, Granola
- Dressing:
- 3 Tbsp Sugar
- 3 Tbsp Nonfat Plain Greek Yogurt
- 2 Tbsp Fat-Free Milk
- 1 Tbsp Poppy Seeds
- 1 Tbsp White Wine Vinegar
Instructions
- Tear kale into bite-size pieces and place in a bowl, spray with the olive oil spray just to lightly coat it.
- Add in the cranberries and toppings of your choice.
- Combine the dressing ingredients in a separate bowl, whisk well and serve topped over the salad.
- Store dressing in the fridge up to a week, be sure to stir again before using.
