I mentioned these taters a while back as part of a post about a fish fry we were having. These are my husband’s cousins tater recipe. They are made frequently at family events and my husband likes to make these when we are grilling at our house. They are simple to make and utilize the grill only so it’s easy to cook these at the same time your meat is cooking.
These can be peeled; however, out of laziness on my own part I opted not to peel them. I think they taste just as great with or without the skin.
The first thing you need to do is grease some foil to place them in. This can be done with non stick cooking spray or oil. Then, you’ll place your potatoes and veggies on top. I used onions and peppers for these; however, my husband’s family also adds mushrooms. Then, I just sprinkle a little garlic powder, salt, and peppers or spices of your choice on top. Lastly, wrap them up and place them on the grill.
Cook them until they are soft then add in chunks of Velveeta cheese and wrap back up again. Be sure to be cooking these on medium heat.
Cook the taters until the cheese is melted then it’s time to serve up the cheesy goodness.
These are a nice alternative to baked potatoes as well.
Grilled Cheesy Taters
- 4 Baking Potatoes, Diced
- 1 Green Peppers, Diced
- 1 Cup Mushrooms, Sliced
- 1 Cup Onion, Diced
- Velveeta Cheese
- Start by putting all of your ingredients on greased sheet of foil.
- Then wrap up and place on the grill.
- These will cook until fairly tender, then add in the chunks of Velveeta. I typically use about 8 ounces of cheese.
- Next wrap them up and put back on the grill until the cheese is melted and the potatoes are soft.
