Picky Eaters: Snack Ideas

One thing I have been working hard to come up with lately are snack idea’s for my toddler.  He likes to snack all day long, which I try to avoid him doing this so much and when he does I like to have healthy options.  We do a lot of dried and frozen fruits, yogurts and cheese.  I also like to mix dry cereal with fruit as well.  Although most days I try to have easy snack already on hand, I thought I’d highlight a few of my son’s favorite snack items.

Toddler Pinwheels

Spinach Smoothie

Chocolate Chip Zucchini Bread

Picky Eaters: Pea Pancakes

Over the past few months, I have been looking at hundreds of new recipes including recipes for toddlers.  One idea I saw repeatedly was ‘Pea Pancakes’.  My initial thought was, ‘I will never make my son eat those, they are green!’.  However, that was before I became a mom of a toddler!

I put aside my disgust with the fact they are green pancakes and decided to give them a try.  Truthfully, they were really good.  Other than them being green, I could not taste the peas.

I used the Bisquick pancake recipe and then added the peas.  I used 1/2 cup of frozen peas that I pureed.  These were not runny like you may initially think, I think part of the reason was that I used frozen peas as opposed to canned peas.  The frozen peas have a bit tougher texture to them.  Be sure to microwave, steam, or let them thaw before pureeing them.  I heated mine up in the microwave until they were soft.

My son loved these and had no idea he was getting a serving of veggies along with his pancakes!  I enjoyed these just as much.  Pea Pancakes will now be a regular meal in our household.

Toddler Taco

My husband and I decided on a Taco Night this past weekend. Lately, I have been feeding my son each meal that I fix in order to get him used to regular foods and away from having lunch meat so much. It’s been going very well as he is very open to trying new foods at this point.

Since obviously he is too young to eat a taco, we decided to make him his own version of a taco. We made corn and rice to go with our taco’s. I put a layer of rice, lettuce, taco meat, corn, cheese, and then topped it with crushed taco shell for my son.

When I fed it to him I crunched the shell more so that it was very small pieces; however, he is starting to be able to handle chips. He also did not eat as much as is on this plate, I realized after fixing it that I used a huge serving spoon and overflowed his plate. My husband was more than willing to help him out.

It was delicious and a perfect way to feed him a similar version of what we were having.

Slow Cooker BBQ Chicken

Words cannot express how good this was! This took mere minutes to prepare and then the slow cooker did all the work!

 

This taste AMAZING! I was so impressed, this may be my favorite busy day recipe because it was so easy and delicious. This was the first time I used chicken thighs and I really feel that made a difference because the chicken was more tender than the chicken breast.
We put this on some toasted hamburger buns and paired with the onion soup potatoes. Corn on the cob would be a nice addition to this recipe too.
This chicken would also make a great topping for baked potatoes or even a BBQ Chicken Pizza.

I decided to let my son try this too; however I was a little skeptical of him eating it with so much BBQ sauce; however, I’ll just let this picture speak for itself of how he felt about this meal.

Ban-Apple Chocolate Chip Waffles

Food allergies are a very prominent part of my family’s daily life. When my nephew was born after many trips to the hospital, my sister and brother-in-law realized that he had life threatening food allergies, 22 to be exact. It was a struggle for them as well as the rest of the family to determine what he could and could not eat. In the midst of that was finding many new websites that address food allergies and great recipes to help those with the same challenge.

I recently found The Food Allergy Mama, and am so excited to be trying some of her recipes. The one that I tried this week was Dairy Free, Egg Free, Banana Chocolate Chip Waffles.

I did adapt the recipe a bit, one of the major things that I changed was omitting the oil. I felt that was a bit too much oil when I typically try to stay away from vegetable oil.

I was so impressed with these, now this will be one of my favorite breakfast dishes around our home. We topped it with some warm maple syrup and sliced bananas. Delicious!
