Picky Eaters: Broccoli and Chicken Bake

I recently became a member of Pioneer Woman’s Tasty Kitchen.  This site has amazing recipes from families all over the country.  If you are looking for one in particular you are sure to find one there.

As I was browsing the site I found the recipe for Easy Chicken and Broccoli Bake. When I saw this I immediately thought this may be a good way to hide in the broccoli for my son, who as we saw in the broccoli post takes after me, he does not like it!

The change I made to this recipe, is that I used Gold ‘N Plump Ground Chicken.  This was my first time using ground chicken, so I cooked it with 1 Tbsp of Olive Oil to add flavor to it.  I had been told that it is best to add more seasoning to the ground chicken.  I was very pleased with the chicken, and it is perfect for my son because he does not like the texture of shredded chicken.

I fully cooked the chicken before adding it to this dish.  After it bakes in the oven for 20 minutes, I removed it, topped it with cheddar cheese and put it back in the oven for an additional 5 minutes.

How did it go over with my son?  He ate every drop!  It is definitely a winner in our household since it accomplished the goal, my son ate his broccoli.  I ate it too, but I still can not seem to get over my hatred of broccoli!

BBQ Chip Chicken

I recently found this Crispy Potato Chip Chicken recipe on Lynn’s Kitchen Adventures.  When I first saw the recipe, I thought it was very interesting as honestly I have never heard of using potato chips as a breading.  I must be out of the loop!  I thought this was a fabulous way to use chicken tenders and a perfect kid friendly recipe.

I decided to mix it up a bit and use BBQ potato chips.  I followed the recipe exactly substituting the regular chips for BBQ potato chips.  I was very surprised when I tasted these, they were delicious!  I did not know what to expect when I made them and they were so good I’ll be putting them on our menu plan more often!

Lemon Pepper Chicken Tenders

There are some days when not only do I not feel like cooking, but I do not have time to cook either.  Oh wait!  That’s most nights!!  Just kidding, I used to be that way, but I am getting better now.   Really though it is after the holidays and we all need a break.  The dish I lean to on days like this, is Lemon Pepper Chicken Tenders.

I like to eat mine with my favorite dipping sauces.

Friday Favorites

My Friday Favorite this week is Slow Cooker BBQ Chicken.  I fell in love the first time I made this, and I work this into our menu plan frequently!  Not only is this recipe extremely easy, especially for busy families, it is also delicious.

Chicken Fajitas

I had initially planned to make Steak Fajitas, but changed my mind at the last minute.  These were delicious, and I plan to try many more fajita recipes in the future including steak fajitas.

Dinner is served!  This made 8 fajitas, making this an affordable meal.
