My Friday Favorite this week is Slow Cooker BBQ Chicken.  I fell in love the first time I made this, and I work this into our menu plan frequently!  Not only is this recipe extremely easy, especially for busy families, it is also delicious.

Slow Cooker BBQ Bacon Beans

My husband loves BBQ beans, so I thought I’d take it up a bit and fix my own!

To go with this dish, I cooked canned home-style biscuits in the oven and boiled sweet corn.  This is a simple and affordable meal.

Perfect dish for my country boy husband!

BBQ Spuds

I am simply in love with my Slow Cooker BBQ Chicken, so I thought we would have it again this past week.

This time instead of making sandwiches out of it, I decided to try it on baked potatoes.

Using 4 large potatoes, I wrapped them in foil then cut a few slits around the potato.  I baked these in the oven at 400* for 1 hour or until they were soft.
Then, I cut them open and layered with toppings.  I started by using butter on the potato, added the meat, cheese, and chives.  Topped it off with a dollop of sour cream.
These were the perfect alternative to the stuffed potatoes that you get at many restaurants.  Typically, that is what I always order when we go out for BBQ.  I love that I can make it at home easily and save money!

Slow Cooker BBQ Chicken

Words cannot express how good this was! This took mere minutes to prepare and then the slow cooker did all the work!

 

This taste AMAZING! I was so impressed, this may be my favorite busy day recipe because it was so easy and delicious. This was the first time I used chicken thighs and I really feel that made a difference because the chicken was more tender than the chicken breast.
We put this on some toasted hamburger buns and paired with the onion soup potatoes. Corn on the cob would be a nice addition to this recipe too.
This chicken would also make a great topping for baked potatoes or even a BBQ Chicken Pizza.

I decided to let my son try this too; however I was a little skeptical of him eating it with so much BBQ sauce; however, I’ll just let this picture speak for itself of how he felt about this meal.
