Make delicious Bruschetta Bites for any party!

Are you gardening this year? We have a plethora of garden fresh produce coming up in our garden. I absolutely love coming up with ways to use up our garden fresh produce. It is even better when I can make the perfect little snack for my family and guests.
This past weekend, I decided to use up some of our tomatoes to make these Bruschetta Bites. They are the perfect treat after a long day at work, a day with the kids, or even after school snack. They are light and delicious, plus a fresh food snack.
If you are growing herbs as well you can even use fresh cut parsley.
What cracker should you use for Bruschetta Bites?
Now once you mix together all your delicious bruschetta ingredients, you want to top it over the perfect cracker. My family loves these topped over Triscuit Crackers.
The flavor of the Triscuit Crackers mixes perfectly with the bruschetta. The flavor of choice in our household is Rye with Caraway Seeds.
Now, next time you need a little break in your day, reach over and whip up some Bruschetta Bites. Maybe it’s just me but it seems like every day around 3pm, I’m craving a snack among other things.
My afternoons lately feel like they drag on until my husband gets home, so a good snack around 3pm for my kids is much needed. Then, my husband can grab a snack too when he gets home from work.

Bruschetta Bites
Ingredients
- 6 Roma Tomatoes Diced
- 1/2 Cup Olive Oil
- 1 Garlic Clove Crushed
- 1/2 Cup Fresh Parsley
- 1 Box Rye with Caraway Seeds Triscuit Crackers
- Italian Shredded Cheese
Instructions
- In a medium-sized bowl, mix together the tomatoes, olive oil, garlic, and parsley.
- Top it over each Triscuit Cracker.
- Garnish with the Italian Cheese.
