I’ll admit breakfast is sometimes a struggle, and I’m typically not in the mood for breakfast. I try though to eat breakfast, but we do have breakfast for dinner quite a bit.
One of our favorite at breakfast for dinner are Breakfast Stuffed Baked Potatoes.
Now that I’m REALLY hungry, it’s time to go eat breakfast! I think I’ll be making one of these again.
These are super easy to make, so I’m going to go ahead with the recipe here, but you can really customize these to your needs.
What do you need for Breakfast Stuffed Baked Potatoes?
- Baked Potatoes
- Breakfast Sausage
- Cooked Scrambled Eggs
- Avocado
- Tomatoes
- Sliced Cheese
- Sour Cream
- Butter
All you need to do is build your favorite baked potato but with breakfast toppings. We liked to use cooked breakfast sausage and go from there on the toppings.
The sky is really the limit here with what you can add.
I also use my air fryer quite a bit to make Air Fryer Baked Potatoes, then I use these topping to change it up for a ‘breakfast’ style baked potato.
Have you ever tried your breakfast stuffed in a potato? I sure think you should, I guess that is if you aren’t looking for low-carb. Another alternative is to do this same technique with a sweet potato.
That gives you a good way to mix it up too. Essentially though, this is like making a hash but with a whole baked potato.
We love to have this as both a breakfast or breakfast for dinner nights too, it mixes up those baked potato bar nights.
