One of the key reasons why I started blogging and cooking many years ago now was because my family could just never get to the table to eat together. That bothered me. It was plain and simple, as a kid growing up, most of our meal times meant we were sitting in the living room watching TV and eating dinner, rarely did we ever eat around the table together. I craved that time as I got older, and it is something that was very important to me when we had kids of our own. As a child, the main reason for this was because my dad worked shift work so really it was nearly impossible to all eat at the same time together. We didn’t necessarily have that obstacle though when my husband and I had kids, but of course, we were super busy too. We decided to carve out at least 2-3 days a week where we eat around the table together, then generally on Saturday mornings we also have breakfast together at the table.
Why is this important? For me, it means truly being able to connect without distraction. I can find out what is going on with my kids and even some fun tidbits about happenings at school with our son too. My son recently made some conversation starters for the dinner table too, so he loves to do those at dinner time. Our routine has been a little bit harder since my husband started a new job and dinner time got pushed back a bit but it’s still very important to us as a family and we try to do it as much as possible. One way to get back around the table is with easy meals that allow you less time prepping and more time with the family.

Now, there are many great things about these tasty chicken breast, but one of them is that all you need to do is remove them from the package, place in the oven on 375* for about 40 minutes, and then let them cool and serve. This is my kind of meal for those super busy evenings when it seems impossible to even get dinner done. There is virtually no prep work and these can cook while I help my son with his homework.
Barber Foods has two different varieties, I actually found both at my local Walmart, they come in Chicken Cordon Bleu and Broccoli & Cheese. My family loved the Broccoli & Cheese. I decided to pair it with freshly trimmed asparagus and tomatoes, then I topped those with a balsamic dressing. I was able to put the vegetables in at the same time as the chicken and in just a few minutes, dinner was done!

Balsamic Asparagus & Tomatoes
Ingredients
- 1/2 Lb Asparagus
- 2 Cups Sliced Grape Tomatoes
- 4 Tbsp Balsamic Vinegar
- 4 Tbsp Olive Oil
- 1 Clove Garlic
- 1 Tsp Salt
Instructions
- Preheat the oven to 375*.
- Trim the asparagus, then place the asparagus and the tomatoes on a baking sheet.
- Combine the vinegar, olive oil, garlic, and salt, whisk well until the dressing is formed.
- Evenly pour over the vegetables.
- Cook at 375* for 10 minutes or until vegetables are tender.
