Baked Potato Medley is a wonderful side to your favorite protein.

As dinner time sets in, most of our main dishes are always set to go, but then I have to figure out a good side dish. Many times, canned veggies are a go-to side dish, but we also love to use fresh produce too.
Last week, I decided to do a quick Baked Potato Medley, using the red potatoes, green peppers, and onion that I had on hand. I quickly mixed together the veggies and placed them in a 9×13 dish. Then, I poured about a cup of Swanson® Broth over them.
After the broth was soaked in, I sprinkled a bit of rosemary and garlic salt evenly over the veggies. This just took about 10 minutes to put together. Then, it was time to bake in the oven for about 30 minutes and we ended up with a delicious side dish.
It was bursting with flavor by using the broth as opposed to water. The broth is the perfect blend of chicken, herbs, and spices. It gives many side dishes a great boost of flavor. We prefer the Chicken Broth and use it in a variety of meals. It can essentially be used in place of water in many recipes.
One thing I love about the broth is it is now in an easy to open and close carton. I can use just the amount I need and store it for later. That works out perfectly for us especially as we get closer to soup season. This is one my go-to ingredients for many soups!

Baked Potato Medley
Ingredients
- 2 Lbs Red Potatoes Quartered
- 1 Green Pepper Sliced
- 1/4 Cup Onion Sliced
- 1 Cup Swanson Chicken Broth
- Rosemary
- Garlic Salt
Instructions
- Preheat the oven to 350*.
- Spray a 9x13 Baking Dish with non-stick cooking spray.
- Evenly place the veggies in the dish.
- Pour the broth over the veggies.
- Evenly sprinkle the rosemary and garlic salt over the dish of veggies.
- Bake for 30 minutes or until baked potatoes are soft.
- Carefully remove from oven and mix up the veggies then serve.
