Have you ever had those recipes that just go wrong? I know I have! What about the times when the recipe gone wrong ends up going right? Maggie had that experience recently when she was trying out a new recipe, that ended up with Funfetti Cupcake Truffles. Even better you can put these on a stick and make some delicious cake balls too.
I had originally intended to make the cupcake truffles I found over at What’s Cookin, Chicago?, but found out mid-way through that I am no good at melting and tempering chocolate. So rather than give up and waste a delicious batch of funfetti cake, I experimented and made my own cupcake truffles!
Ingredients:
One box Funfetti cake mix (check box directions for cake ingredients – water, eggs, oil)
One can vanilla frosting
Sprinkles
Cook the cake according to package directions. Once baked, set aside to cool, then crumble in a large mixing bowl.
Once the cake is crumbled, melt about half a cup of vanilla frosting in the microwave. Pour in to cake crumbles and mix well. This will help the cake truffles to stick together.
Next, roll dough into one-inch square balls. Place rolled balls into mini cupcake baking cups. Melt remaining frosting, and drizzle over truffles. Top with sprinkles, and set in the fridge for 1-2 hours to cool.
