Chocolate Chip Pancakes

A friend of mine passed along a simple pancake recipe to me several months back that is now my go to pancake recipe.  It is simple, only uses basic ingredients.  I love using this recipe on days when I need to go to the grocery store but have not made it yet because typically I always have the ingredients on hand.

The best part though about this is you can use whatever you do have to add to it.  Guess what we had when I made them this week?  Chocolate Chips!  Yes, I am never without a bag of chocolate chips, it’s my guilty pleasure.  I also love that this seems to make a lot, it makes at least 12 pancakes for us; however, it may make more for you.  My husband likes to make pancakes the size of my head and honestly…I have a big a head.  That’s a very large pancake.  I am more of a silver dollar size pancake eater, and if you are too then it will make a lot.

I normally put them in the fridge or freeze them and use for breakfast during the week.

This recipe calls for self rising flour which eliminates having to use baking powder.  I used a gluten free self rising flour from  my local grocery store, and it worked out just as well as a regular self rising flour.  They had the same taste too which is what I love the most.

Chocolate Chip Pancakes


  • 2 Cups Self Rising Flour (or Gluten Free Self Rising Flour.)
  • 2 Cups Milk
  • 1 Cup Sugar
  • 2 Eggs
  • 1 Tbsp Vanilla Extract
  • 1/2 Cup Semi-Sweet Chocolate Chips


  1. Combine all ingredients except chocolate chips in a mixer and mix well. Fold in the chocolate chips.
  2. Now, spray the griddle or skillet with baking spray and warm to a medium heat.
  3. Let it cook on one side until the batter begins to bubble, then flip over and cook until done. This typically just takes 2-3 minutes.
  4. These make approximately 12 pancakes.

    This sounds yummy, but I was wondering if the 1 cup of sugar is a typo… most pancake recipes would have 1 Tbs of sugar in my experience?

      Nope, it is a cup. I’m guessing it’s that much because it makes a lot, so once you break it down between the amount of pancakes you have it’s probably minimal sugar.
