Slow Cooker Rosemary Chicken and Potatoes

slow cooker rosemary chicken

I have a confession to make, I am addicted to Rosemary!  I love the smell and being that I’m pregnant that’s a huge plus!  So, when I looked in my freezer to find chicken drumsticks and in my fridge to see new potatoes and lemon plus rosemary in my pantry, I knew I was on to something!

The heat in Oklahoma has been smoldering to say the least with highs up into the 110′s, I decided to make this a slow cooker meal!  This is also great for busy days and as school gets back in session when you just need a good meal but with little to no cooking involved.

One thing I love about cooking chicken in the crock pot is that it nearly falls off the bone because it is so tender when it’s done, I think that just adds to the delicious factor.

Let’s move on to this easy recipe!

  • 1 Tbsp Rosemary
  • 1 Tsp Oregano
  • 1 Clove Pressed Garlic
  • 1 Lemon, halved

  1. In a 5 quart slow cooker, being by spraying it with non stick spray. Next, place the potatoes on the bottom of the slow cooker.
  2. Then, top the potatoes with the chicken drumsticks. Pour the olive oil evenly over the potatoes and chicken then add in the rosemary, oregano, and garlic.
  3. Adjust the measurements as well if you use more or less potatoes and chicken.
  4. Lastly, squeeze the lemon juice of half a lemon evenly over the potatoes and chicken.
  5. Cover and cook on low for 8 hours.
  6. Serve with sliced lemon to garnish.

I’m going to try this. I can’t stand the texture of chicken that cooks submerged in liquid. Thanks!

Can I cook this a little faster in my crockpot? would 4 hours be ok? Want to make this tonight but just got back from the store with the chicken. HELP!

Yes, you could do it on high for 4 hours. Just be sure your chicken is done before eating but typically with crock pot meals you just cook on high and you can do it in 1/2 the time.

I didn’t think they were, but they are very soft. You could def probably put them in at 4 hours too!
