One of my family favorites are, Sloppy Joes.  I’ll tell you a secret or maybe I have already mentioned this, up until I met my husband I only had Sloppy Joes one time in my life, and I think that was at church camp.  Then, his mom made them one night for us when we came over for dinner and it was like this amazing taste of heaven.

Then, I had to question my mom on why we never had these growing up.  I’m sure when I ask she just smiled because she hated cooking and made no excuses about it.

Typically, we serve ours on hamburger buns but my pregnancy cravings are screaming for potatoes.  I’m surprised I haven’t turned into a spud at this point.  I have eaten at least one a day for weeks now.

These Sloppy Joe Spuds turned out to be quite the hit, my husband loved them as did I.  It was a great alternative to a typical hamburger bun and a good way to mix them up if you have leftovers too.

I just used the recipe for Good Ol’ Sloppy Joes and then topped them over potatoes!  Simple!

Sloppy Joe Spuds

Yield: 4

Ingredients:

  • 1 Lb Ground Beef Chuck
  • 1/2 Cup Onion, Finely Chopped
  • 8 oz Can Tomato Sauce
  • 2 Tbsp Honey
  • 1/4 Tsp Dry Mustard
  • 1/2 Tsp Salt
  • 1/4 Tsp Pepper
  • 4 Baked Potatoes, Cooked
  • Cheese

Directions:

  1. Brown the meat in the skillet on medium heat and then drain. Once drained add in the onion and cook for 3 minutes stirring in the remaining ingredients. Simmer for another 5 minutes.
  2. Top this over a sliced and buttered baked potato then top with cheese.

    Making this now! It smells great! I added green peppers with the onion :) I can already tell my kids will gobble this up! Thanks again mommyhatescooking! We’ve loved so many of your meals!
