Slow Cooker Rosemary Roast and Potatoes

I will honestly admit this is by far my favorite roast recipe…EVER!  The aroma that floated throughout my house all day was incredible, then the taste…pure bliss!

How could this recipe get any better?  It’s a slow cooker recipe plus you can cook the entire meal including the veggies!

I adapted this recipe from the cookbook, Everyday Gluten Free Slow Cooking; however this does not use any specialty ingredients due to being gluten free.

Slow Cooker Rosemary Roast and Potatoes


  • 2 Tbsp Dried Rosemary
  • 2 Tbsp Minced Garlic
  • 3/4 Tsp Salt
  • 1/2 Tsp Ground Black Pepper
  • 3 Lb Beef Pot Roast
  • 1/2 Cup White Onion, Sliced
  • 3 Large Potatoes, Cut lengthwise in half
  • 2 Tbsp Butter
  • 1/2 Cup White Cooking Wine
  • 1 Lemon, Sliced
  • 1 Package of Baby Spinach


  1. First mix together the rosemary, garlic, salt, and pepper. Then, rub it on the roast and set aside.
  2. Spray the slow cooker with non stick cooking spray, then place the potatoes on the bottom. Place the onion slices over the potatoes and add the butter as well. Next, pour in the cooking wine.
  3. Put the roast on top of the potatoes and then arrange the lemon slices on top of the roast.
  4. Cover and cook on low for 8 hours.
  5. Remove the roast and set aside letting it cool. Use a slotted spoon to remove the potatoes and set them aside.
  6. Pour in the baby spinach into the juices and let it cook until wilted. This only takes a few minutes.
  7. Remove the spinach with a slotted spoon and place in a bowl or on a plate.
  8. Now, arrange the potatoes, roast, and spinach to serve.



This dish is very simple to put together and cook, but it looks like you spent all day cooking it!

    Thanks for the shout out! I am glad to hear that you enjoyed the recipe, I live the idea of using a beef pot roast in place of the pork. Happy cooking to you – even though you hate it ;)
