For our first Valentine’s Day as boyfriend and girlfriend many years ago, my now husband made us Chicken and Rice with a candlelight dinner. I thought being Valentine’s Day, I’d share the recipe for Chicken and Rice.
He made Chicken and Rice since at the time that was my favorite homemade dinner. It’s funny to me now because after cooking so much, I still do enjoy it, but it seems so bland. I like to add a little bit of flavor to give it more taste.
To give it more taste, I would add in some seasonings like paprika, lemon pepper, or even a bit of garlic. I prefer the chicken to be a bit flavored.
Ingredients:
- 3-4 Boneless, Skinless Chicken Breast
- 2 Cups Brown Minute Rice
- 1 14.5oz Can of Chicken Broth
- 1 10.5oz Can of Cream of Chicken
- 1-2 Cups of Water
- Dash of Paprika, Lemon Pepper, or Garlic for additional flavor
Directions:
Preheat oven to 400*.
Using a 9x13 casserole dish, place the chicken on the bottom and then add in the rice, broth, and cream of chicken. Sprinkle a dash of the spices you choose over the chicken.
Bake this in the oven for 1 hour or until the chicken is completely cooked. While it is baking, check on it 1/2 way through and if the rice is getting dry, add in 1-2 cups of water to add additional liquid.
