My Life Lately

I’ve mentioned a few things about being Gluten Free on Facebook recently; however, I have not really posted about it or told my story on what has been happening lately in my life or I should say my body.  Let me warn you this is going to be much longer than my usual post and more personal, but it affects this site and my future recipes.

Since I was a kid I have had nothing but stomach troubles, I always related it to being lactose-intolerant.  I would push through the pain with several varieties of medicines.  Plus, to put on top of that I have severe reflux and GERD.  Usually the reflux gets the blame for everything.

Then, bring it up to about the last few years, nearly every other day I would be sick to my stomach so much so I could hardly get moving in the morning or I would be drinking sprite and eating crackers on a daily basis.  I can’t even fully describe to you the pain I was in.  When I was pregnant I was in so much pain that I ended up in the hospital.  Again it was all blamed on just stomach cramps or pains.

After the stomach pain came the fatigue, it felt like chronic fatigue sometimes taking me hours to truly get moving in the mornings and then after an hour of doing something I would need to take a nap.

Next came the vomiting, every morning it was like a ritual for the last several months.  I knew that immediately after I would eat, I would be throwing up.  Every family member I talked to continued to ask “are you sure you aren’t pregnant”.  At some point, I just wanted to scream, I AM NOT PREGNANT!  Trust me, I took test, several of them hoping that’s what the issue was, but it wasn’t!

Finally, the hypoglycemia.  I constantly felt as if my blood sugar was dropping, but why wouldn’t it be because I was throwing up every time I ate!?

All of these things collided this past month.  I was so sick, so much that it was a miracle for me just to get my son to school and get home and go back to bed.  It was all I could do to cook dinner and get work done!  When my son would wake up, I would just want to roll over and cry because I was so extremely fatigued I could not even play with him.  It was bad enough that each day I would just pray he’d sit with me and watch a move for a few hours in the mornings.  This was something we hardly ever do during the day.

I had enough, I knew something was not right.  I felt this immense despair that at age 28 this was going to be my life, day in and day out would be a struggle just to get up, to eat, to function and truly live.

Keep in mind that I had several test run back in the summer for all of these issues but nothing was found to be wrong.  I started googling and talking to friends that are gluten free finding out their symptoms and finding out that almost each one of them was not officially diagnosed gluten free but simply tried the diet and it worked.  It is extremely difficult to diagnose and most people that are gluten free find out they need to be by trying the diet.

The more I talked to each friend that is gluten free the more I felt like they were telling me all about my life, they had lived it and been there!  They each spoke volumes about how incredible they felt just within days of going gluten free and that the most results though you will see several years later as your body takes a while to heal.

The first part was to try it for 2 weeks and see what I thought and really stick to it cutting out the gluten.  I will tell you that I wanted to cry my eyes out as I realized everything I normally bake with contains wheat.  Then, shortly after that I started realizing all the things that I could eat and how easy some of my recipes would be to convert to gluten free.  This gave me hope.

Let’s fast forward here, the very first day that I went gluten free I had a few stomach pains which I later found out was the gluten free whole grain bread, apparently I need to stick to gluten free white bread.  The next day I had absolutely no stomach pain whatsoever.

Honestly, I had to tell myself each day that this was what it felt like to not have stomach aches and to have energy.  I forgot what that was like, I lived with stomach pain.  My friends and family never knew this because unless you were my mom or my husband, I likely never said anything.  I always pushed through the pain.

Then, I noticed I hadn’t been throwing up either, keep in mind here that I was barely able to get out of bed, throwing up every day, and had immense stomach pain.  I truly did not remember what it was like to not feel sick to your stomach.

Now after 2 1/2 weeks, I haven’t thrown up since the day I went gluten free, I haven’t had a stomach ache since the day I went gluten free, I haven’t had a single blood sugar drop which was happening daily, and I have had more energy in the last 2 1/2 weeks than I have had in years.

What have I learned?  That although I may not have a gluten allergy, it is affecting me in huge ways enough so that I will likely never touch gluten knowingly again the rest of my life.  I may still cook with it for my family on occasion, but the fact that I feel this good after feeling like I was going to live my life in bed or worshiping the porcelain throne for life…I am happy to go gluten free instead.

What does this mean for the website?  You will still see easy, tasty recipes; however, I will likely be cooking the majority gluten free.  If I’m doing pasta I will just add a note stating how to make the recipe gluten free the same goes for most of the other meals.  This way those that are gluten free or are not gluten free can both enjoy each recipe.

There will also be a few showing up that are not gluten free that I made previous to the gluten free diet.  I am just now getting those on the site this upcoming week, after that the majority of the recipes that I will be showing can be easily made gluten free, I’ll make notes of how to do so on the post.

I hope you understand this and where I am coming from.  This diet is certainly not for everyone and by all means if you can eat gluten and bread, eat a piece for me because I certainly miss it.  I was a carb and bread fanatic; however, I have high hopes of creating recipes to satisfy those bread taste buds again!

    Because … if you weren’t and you want to find out for certain that’s what you have, you’d have to reintroduce gluten back into your diet (but maybe not since it hasn’t been that long)

    just a thought.

  2. Congrats on going gluten free! It takes courage to change. I too grew up with stomach troubles. Three years ago I went gluten free. I still miss some of the wonderful food that I used to eat (mainly fresh doughnuts) but it’s not worth being sick. It will get easier-I promise. If there’s anything I can do to help let me know! You can do it! :) I know you will keep up the great work!

    • Thank you! I agree it is hard especially seeing some of the foods that I want so bad!! Not being sick though is far worth it in the long run.

    • I started a low-gluten/gluten free diet when I got suiroes about my fitness.I feel lighter after meals and more able to exercise. Plus my muscle/fat ratio is continually improving. Many people are intolerant to some extent without realising it and many digestive issues can be solved by butting gluten out of the diet.Plus, while a gluten-restrictive diet is not necessarily calorie restricted, the fact that more of your calories come from protein and the fact many snacks are off-limits often translates to a lower-calorie diet, which has obvious benefits for weight loss.I wouldn’t personally recommend Atkins as a diet plan. I understand using it to lose weight in the short term but I think the macro-nutrient profile of the diet is less than beneficial in the long term. As an alternative I would recommend looking at the Paleo or Primal diet. It’s based around fruits, lean meats, root vegetables and so forth. I’ve been doing that but including dairy products and have seen great results.Stuff that contains gluten includes bread, pasta, rice and most empty/bulk carbs. After a while, you’ll get used to checking food labels to see if stuff is gluten free.Good luck!

  5. Glad you are feeling better! Trader Joes sells gluten free corn pasta that tastes just like regular pasta. Seriously, same taste and mouth feel.

    I’m sorry you have had such a rough time, but happy you have it resolved. I am originally from Oklahoma andnow live outside Denver, Colorado. I used to work at a bakery/catering company called Udi’s. They have wonderful artisan breads. They have now opened a new baking facility just for gluten free products. They have also started selling all over the US. The products, bread, pizza dough, cinnamon rolls, muffins, granola, etc., are very tasty and top quality. I checked stores in your area that carry Udi’s. Whole Foods in Tulsa, Reasor’s, AKIN’S, Petty’s, and Natural Farm’s. They have the best Granola I have ever tasted. The new GF breads are highly recommended .

    • Oh yes, I love Udi’s!! I tried their breads during the diet and I’m sold on them. I actually like the GF Udi’s bread better than regular bread. I just went to Akin’s today and picked up some of their muffins. I haven’t tried the granola though, I’m going to have to go back and pick that up too!! What a wonderful place to work at!

I have dealt with stomach issues my whole life (in fact, I just got home from the urgent care because I was in do much pain from the stomach issues) and have been thinking about trying out the GF diet but just didn’t know where to start. This was very encouraging. Now I just have to get my hubby on board!

  9. thank you so very much for sharing your story– you described me to a T – as I was tellig my husband about this as he like yours was only one who sees me day in day out and knows how much I suffer and go thru, he immediately went around reading labels on all products while I was searching for foods, recipes and etc on Pinterest and the web, he said 99% of stuff in our house is glutten, I have to agree that 99% of what I am eating is this, to bad your email didnt come out before I bought groc Friday but hey that is life, so this friday we deceided we are driving hour each way to bigget town bigget groc store and seeing if ewe can find actual gluten free bread and get some other gluten free products, you and your followers only one that knows this, we are telling anyone else to wait and see, figuring I / we will know in week or 2 at most as I was a big eater of club, and reg crackers every day, and english muffin bread and wheat bread– oh me oh my — FINGERS ARE CROSSED since doctors cant seem to help, ( I even checked my meds out on line and checked Mayo clinc site for info) THANK YOU THANK YOU THANK YOU– am waiting on your recipes with both ways of fixing, again thanks and SOOOO GLAD YOU ARE FEELING BETTER

  12. I am so glad you found your cure! I am also gluten intolerant, and had the same sickness as you did and I also had canker sores in my mouth all the time. I went gluten free and all my symptoms went away. I am so glad you will be posting gluten free recipes; I love your cooking, I just convert them to gluten free.

  13. Hi! I had very similar things happen over the last year and Finally first of March this year I went gluten free! If I accidentally have it, I get so sick, major stomach pains and vomitting. I thought for sure vomitting wasn’t from gluten, but thankfully after reading this I see it certainly is.   14. Just discovered your blog…and LOVE IT! Thanks so much for sharing such wonderful recipes. By the way, I am gluten free, too…and can TOTALLY relate to your story. I had stomach pain my ENTIRE life. Sounds crazy now, but I never really thought about it being “different”–it was normal, at least for me. So, I never really talked about it or thought about it…until I hit my 30′s and the symptoms were unbearable. I went through the throwing up thing, too…like you did. It was AFTER I had one of my children, so it seemed strange. Makes me wonder if there is a connection somehow…that having gone through birth makes all the symptoms worse or something…??? Anyway, glad you’re on the road to recovery and healing up your insides!!! My son (8) can’t have gluten either. He was looking at some of your recipe pictures and getting very excited. HA!
    Thanks again for great recipes…they totally work for where I’m at in this crazy-busy stage of life.

My issues peaked after I had my first child too, must be all the changes that go on in the body have something to do with it. I’m just so thankful there are so many great gluten free alternatives nowadays!

  15. I found you at the perfect time! I am GF due to gluten intolerance because of AI Hypothyroidism. My husband is soon to be GF and is not happy at all… I think your recipes will help him cope :)
    Something to point out to some comments I’ve read, is that w/ GF it is an aLL or nothing diet, not a “low”, or sometimes gluten… A TRACE of gluten can remain for weeks or months and damage the villi in your intestines.
    The reason the issues peak after childbirth is thought to be due to the STRESS the body endures, and generally -although not always – because gluten intolerances are due / related to autoimmune illnesses which even if we have them prior to child birth, we may not have them brought out / felt until that event (Same case for me…). If many other tests are negative, it could be worth it to try an ANA which can give an indication of general response to autoimmune response in the body,although if there is not one at the time the test is taken it might not help.

    Anyway………….. Again, I am SO glad to have found you, and consider me a new follower!

    • Wow!! Very good points, I had not thought of all that either. I hope you find some recipes you’ll enjoy! The key for me has been finding the right substitutes to keep eating the foods I love and giving up the ‘convenience’ foods.

    Add cardiac and thyroid problems problems also and you described what I went through before going gluten free 2 years ago. It’s been amazing to see how things I thought were just part of being human like headaches,acne and gas were not normal at all and never affect me anymore. It feels so great to be healthy.
