Seasoned Chicken Gyros
This year, I am going to be trying to come up with healthy lunch ideas. I noticed that although nearly all of our dinners are relatively healthy, lunch is very hard for me. I typically do not menu plan lunch as best as I should, because typically I just grab something on hand or eat leftovers.
Throughout the past year, I have had several close blood sugar calls and found out that I needed more protein during the day not just at dinner time. In saying that, I decided it was time to take control over my lunch time.
This is one of my first lunch post that I’ll be doing; however, these meals can also be a dinner recipe too. I have to admit this was a huge success, likely one of my favorite sandwiches. This is my version of a healthy gyro; although, many may just call it a wrap or flat bread sandwich.
To make the chicken, I put 2 chicken breast seasoned with lemon pepper in the slow cooker on low for 8 hours. Once the chicken breast was full cooked, I shredded it and took it off the bone. This sandwich can be made with any chicken and is good to use with leftover chicken as well.
The bread that I used is Flat Out Fold It’s. I found this bread at my local Walmart and was unable to find it at my regular grocery store.
Let’s get on to this delicious recipe!
- 1 Package Flat Out Fold It Traditional White Bread
- 6 Oz Nonfat Greek Yogurt- Plain
- 1/2 Cup Nonfat Sour Cream
- 1 Tbsp Dill Weed
- 2 Cups Shredded Chicken
- 1 Tomato, Chopped
- 1 Red Onion, Chopped
- Baby Spinach
- Feta Cheese
In a small bowl, mix together the yogurt, sour cream, and dill weed then set aside.
Lay out one of the flat out's and then put your chicken, tomato, onion and baby spinach on it.
Top this with the dip mixture and then sprinkle with a small portion of feta cheese.
Fold it over and serve.
This will make at least 6 sandwiches.
This is based on the recipe serving 6 and assuming that you eat 1 serving.
