I hope everyone had a wonderful Christmas and holiday weekend!
My husband has been requesting ham and beans for a while now, but I am not much of a beans person. I have never cared for them much except mixed in soups or chili.
I finally gave in and decided to make some for my husband. They actually turned out really well and he said they were definitely blog post worthy, so I am going to share with you the recipe I used.
Ingredients:
- 1 Lb Dry Pinto Beans, Soaked Overnight
- Leftover Ham (2-3 Cups, Diced)
- 1/2 White Onion, Diced
- 1/2 Cup Brown Sugar
- 1/8 Cup Fresh Parsley
Directions:
Once the beans have been soaked overnight, add them to a 4 quart slow cooker, then mix in the remaining ingredients.
Be sure the slow cooker has enough water to cover the mixture.
Let this cook on low for 8 hours. Serve this with a side of cornbread.
