Sizzling Skillets Giveaway and Chicken Pot Pie

This may possibly be the best pot pie I have ever tasted.  Why?  It was not creamy like the traditional pot pie.  This recipe called for chicken broth and flour to make the pot pie a bit thick but it was not overly thick.  The recipe also used biscuits to cover the pot pie instead of a traditional crust.

I will admit that I cheated and used canned biscuits as oppose to making Emeril’s biscuits.  Although the recipe looked simple, I was starving and looking to get this finished quickly and just happened to have a few cans of biscuits in my fridge.

My husband agreed that out of all the meals so far this is our favorite.  It also made me realize how many other ways I could utilize this, possibly making individual pot pies next time using biscuits as well.  I also appreciated the use of so many fresh veggies, this dish was packed with veggies so it was a one dish dinner which I love!

Another thing I was appreciative of is that it only used one skillet.  The cast iron skillet was used on the stove primarily and then popped in the oven to cook the biscuits for a few minutes and dinner was served!

    I love Emeril because he seems “real” – like someone you could sit down with and talk for hours. I’m excited to start watching his show on the Hallmark Channel.

    This pot pie looks fantastic! I became a fan of Emeril way back in the day when Food Network first started, my parents would put it on and we’d all watch him. I just love how personable he is.     Emeril was one of the first Chef’s that I watched on the Food Network. One of the first recipes of his that I made was a catfish recipe on a stick. Man, I don’t know why I remembered that one!! Extremely good, It even made my husband comment on how good it was. (He usually has no opinions! LOL) If I remember it still, 15 years later, it must have been good.

    I have to admit, the only thing I know about Emeril is that he likes to say “Bam!” But the recipes you’ve been showcasing have looked fantastic, and I’d love to get to try some of them out. The beef and broccoli stir fry you just posted today looks DIVINE… :)

    I have loved all of Emeril’s recipes that I have tried because they have been simple to make and they have tasted like it took all day for me to make them. He’s also fun to watch and really gets into what he is making.

    I absolutely Love Emeril! He was the first one I ever watched on Food Network many years ago, and have watched him ever since. He is so personable and down to earth…that is just a couple of things I love about him! This new book looks fantastic…anything that can be made in one pot and come out looking so delicious as his Chicken Pot Pie…I would love!!!
