I have been on a strawberry kick lately, and these are by far one of the best ways to use them. What could be better than cool whip, strawberries, and maple syrup?
- 2 Cups Baking Mix or Gluten Free Baking Mix
- 1 Cup Milk
- 2 Eggs
- 1/2 Cup Chopped Strawberries
Combine baking mix, milk, and eggs until well mixed. Then, add in the strawberries and mix together. In a skillet set on medium heat begin pouring 1/4 cupfuls. You will want to cook these on one side until it begins to bubble then flip and cook on the other side. This recipe made 8 pancakes.
I topped ours with Cool Whip using a decorator bag and Wilton 1M tip, then added warm maple syrup and sliced strawberries.
