As I have said before as a kid my mom was not a fan of cooking, so many of our dishes were easy, heat and serve dishes. The funny side of this is that although my mom was into easy she never once used Hamburger Helper. I remember telling her how much I wished she’d buy Hamburger Helper because I loved it, but she would never even consider it. She hated it. She would make homemade versions, but never buy the boxed brand.
I guess this trait has now been passed on to me, because I have never purchased it either. I really have no reason why other than my mom never did, so I don’t.
In saying all this, I still do like the idea behind it so this is my family’s version of the great Hamburger Helper.
- 1 Cup Elbow Macaroni Noodles, Cooked and Drained (I use Tinkyada for gluten free.)
- 1 lb Ground Beef, Cooked and Drained
- 1 Cup Meat Pasta Sauce
- 1 Tbsp Olive Oil
- 1 Tbsp Chopped Basil
- 2 Tbsp Chopped Onion
- 3 Cups Fresh Spinach, Stemmed
- Shredded Mozzarella Cheese
Once the ground beef has been fully cooked and drained return to the skillet and add in the pasta sauce. Let this simmer for about 5-10 minutes until heated through. In a separate skillet add the olive oil, basil, and onion. Let this simmer until the onions are slightly browned then add in the spinach. Cook this until the spinach wilts, next add in the noodles and toss. Be sure to coat all of the noodles then mix in the meat and sauce mixture.
Mix this well and serve topped with cheese.
