These fruit bars were inspired by the Breakfast to Go Square in my Enjoy Life’s Cookies for Everyone cookbook.
I adapted the recipe a bit based on what I hand but essientially it is the same.
Ingredients:
- 2 Cups Steel-cut oats
- 1 Cup Dried Fruit, Packed
Directions:
The enjoy life recipe calls for apricots or apple pieces. I ended up using dried cranberries and then used 1/2 a cup of white chocolate chips as well.
Start by cooking the oats as instructed on the package, then stir in the dried fruit. This mixture will need to be poured into a greased 8 inch square pan. Using a spatula, smooth out the top evenly and then cool completely by placing in the fridge. These can be cut into squares and served for a snack or breakfast.
I will say this was the first time I have had steel cut oats so it was a bit of a different taste to me, but my son loved them. He could not get enough of these. I thought this was such a great idea especially for toddlers because it is so healthy. It’s also an easy snack!
We will be making these regularly and trying different varations.
