I recently posted on Facebook about healthy snack ideas. One that was mentioned was Zucchini Bread. I wanted to try this for a while, but something about Zucchini in bread did not mix well for me. I finally decided I would just try it and see what it was like!
I was stunned, amazed, impressed, and any other word you could come up with for shocked! It was delicious!
Ingredients:
- 3 Cups Flour
- 1 Cup Brown Sugar
- 1 Cup White Sugar
- 1 Cup Applesauce
- 2 Eggs
- 1 Tbsp Baking Powder
- 1 Tsp Baking Soda
- 2 Tsp Vanilla
- 1 Cup Grated Zucchini
- 1/2 Cup Chocolate Chips
Directions:
Preheat oven to 375*.
In a mixing bowl begin to mix together the dry ingredients, then gradually add in the remaining ingredients. Mix this until all ingredients are blended together nicely. I used a bundt pan to make this bread. It was enough for 1 bundt pan, or could make 2 loaf pans.
This will bake in the oven for about 45 minutes, be sure to do the toothpick test to make sure it is cooked in the middle before removing from the oven.
The best part about this bread, my son would eat it not knowing he was eating veggies too! That’s a win for us!
