Tortellini Soup

If you are looking for a soup recipe that adds a twist to the typical soup then Tortellini Soup is just for you.  I found this soup on Tasty Kitchen and knew just by looking at it that I had to try it.

The broth is a simple tomato based broth and adds in the nice flavor of fresh spinach with the pasta and cheese combination of tortellini.  The great thing about researching recipes are all the different recipes that I would have never even thought to put together.  For example in my mind tortellini always goes with Alfredo sauce.  It never occurred to me to try it in a soup.  After having this soup, now I have a whole new array of dishes that this combination has shed light on.  I plan to make this soup again as the recipe instructs, but also with different variations of broths.

We paired this with a homemade garlic Italian bread.

I made this soup for our Valentine’s Dinner to go with our Italian theme night.  It was simply perfect.

    Thanks for the post, I love tortellini, but I’ve never thought of pairing it with Alfredo sauce! I usually cook the pasta, brown butter in a separate pan and add the cooked pasta to the brown butter, then douse with balsamic vinegar, cooking it until it’s a thick sauce. Then topping it with parsley and Parmesan cheese.

      That sounds really good! I’ve always had it with alfredo sauce at our local Italian place. That’s probably why I usually make that connection.
