Tater Tot Casserole

One of our favorite family meals is Tater Tot Casserole.  This dish is perfect for kids and adults, I loved it and so did my toddler!  Although, tater tots may not be the healthiest of options it is a nice meal to have a ‘fast food’ dish at home.  I like to add veggies to ours just to give it an extra boost!

Tater Tot Casserole

Ingredients:

  • 1/2 Bag of Frozen Tater Tots (1 lb, I had a 2 lb bag)
  • 1 lb Cooked Ground Beef
  • 1 Can Cream of Mushroom (Gluten Free Cream of Mushroom)
  • 1/2 Cup Frozen Peas, thawed
  • 1/2 Cup Frozen Corn, thawed
  • 1 Cup Shredded Cheddar Cheese

Directions:

  1. Preheat oven to 400*.
  2. In a large bowl, mix the cooked beef, soup, peas, and corn.
  3. Then, pour this into a greased 9×13 casserole dish or square pan.
  4. Top the mixture with a layer of tater tots.
  5. This dish will bake for 20 minutes, then remove and add 1 cup of shredded cheese to the top, place back in the oven for additional 5 minutes or until cheese melts.

 

This is a one dish meal, which are dishes I love!  It makes it perfect for young kids to get a serving of veggies!

    Have you cooked this recipe from frozen before? I would like to know if I can do this one ahead of time and freeze it for later.

      I have not tried it that way, but I would imagine you could.

        I would have to cut them up in little bite sizes then boil them to make it a little softer huh? I work for a homeless shelter and were limited on the food supply so I thought about the real potatos :)

          Yeah, I would say cut them up then maybe fry them if you can in some oil to give it like the crust taste of a tater tot.

    I want to try this by substituting the ground beef with ground turkey and the tater tots with sweet potato fries for a healthier kick… I am always trying to tweak recipes in a healthier way if possible.

      I make a similar casserole and use lean beef, low fat soup and 2% cheese. It is awesome. We all love it!!
