Picky Eaters: Mini Meatloaf
I decided to try and make my son a toddler sized meatloaf, which lead me to make Mini Meatloaf. I used my basic meatloaf recipe, but I used muffin tins and mini meatloaf pans to make them. Using this recipe I was able to make 12 meatloaf muffins and 4 mini meatloaves in my meatloaf pans.
I added a few veggies and we had a very kid-friendly and delicious dinner!
- 2 lbs of Ground Beef
- 1 16oz Jar of Spaghetti Sauce
- 4 Egg Whites
- 1 Cup of Oats or Certified Gluten Free Oats
Preheat oven to 375*.
In a bowl, mix the beef with the spaghetti sauce (3/4 of the jar), egg whites, and oatmeal.
I sprayed muffin tins and was able to make 12 mini meatloaf and 4 meatloaf in mini meatloaf pans. If you prefer all muffin size, then you can do 2 muffin tins and make 24.
This will bake in the oven for 45 minutes or until fully cooked. Top the meatloaf with the remaining sauce and serve.
