If you follow me on facebook, then I am sure you have heard about all the snow in my town. As the snow continued to come down in the Midwest this past week, I decided that I wanted to think more about sandy beaches and sunshine than cold and snow! This idea lead me to dream up ways to bring Hawaii to our dinner table! I will not say this is a true ‘Hawaiian’ Dish, but it’s my own version based on what I had. When you get snowed in you have to start improvising!
Ingredients:
- 3 6oz White Fish Fillets
- 20 oz Canned Pineapple, Reserve Juice
- 1 Egg White
- 1/3 Cup Bread Crumbs
- 1 Cup Brown Minute Rice
- 1 160z Bag of Mixed Veggies
Directions:
Preheat oven to 400*.
Using the reserved juice mix a 1/3 of the juice with 1 egg white in a small bowl. Pour the bread crumbs in another small bowl. Then, begin to dip the fish in the egg mixture and cover with the bread mixture. Place these on a foil lined baking dish.
Once the fish is on the baking dish, pour another 1/3 of the juice over the fish. Then, top with 1/2 a can of the pineapple.
This will bake in the oven for 20 minutes or until it is easily flaked with a fork.
While this is baking, prepare the rice as instructed on the package.
In a separate skillet, I mixed the veggies, remaining pineapple juice and chunks then cooked on medium heat. I cooked these until the veggies were soft enough for our taste.
To serve this dish, I placed the fish on top of the rice and served with veggies.

This hit the spot for my family to be a delicious fish dish. I will admit the first time I made this I used catfish, for some reason the catfish tasted too much like fish for me, tilapia is much better! Of course, my goal for myself is to make it taste the least like fish as possible!!
