I love coming up with new twist on pancakes such as my Banana Blueberry Pancakes. This time, I decided I would try another way to eat pancakes and get a little bit of nutrition in them as well.
Ingredients:
- 2 Cups Baking Mix
- 1 1/3 Cup Milk
- 1 Egg
- 1/2 Cup Raisins
- 1 Tsp Cinnamon
Directions:
Mix together the milk and egg then begin whisking in the baking mix, raisins and cinnamon. Continue to mix until no longer lumpy.
Then, in a skillet set on medium heat begin pouring 1/4 cupfuls. You will want to cook these on one side until it begins to bubble then flip and cook on the other side. This recipe made 8 pancakes.

I’ve made these before, but with complete pancake mix instead. I often buy it at Dollar Tree and it’s really not bad at all. Other times I’ve added applesauce and cinnamon. Or mashed sweet potatoes and pumpkin pie spice (oh, these are so so so good!!) I’m not sure I’d like bananas in them, but there is definitely more than one way to change up those basic pancakes to make them more interesting.
