Slow Cooker Chicken Taco Soup

Immediately after making my Slow Cooker Taco Soup, I knew that this recipe would be showing up on our menu plan frequently.  It is one of my husband’s favorites, and he likes very few soups.

This time I decided to change it up a bit to use Gold ‘N Plump Ground Chicken instead of beef.

Slow Cooker Chicken Taco Soup

Ingredients:

  • 1 lb Ground Chicken
  • 1 Package of Taco Seasoning
  • 1 15oz Can Northern Beans
  • 1 15oz Can Black Beans
  • 1 14.5oz Can Diced Tomatoes with Green Chilies
  • 1 14.5oz Can Chicken Broth
  • 1 Cup Water
  • 2 Cups Frozen Corn

Directions:

  1. In a large skillet cook the ground chicken and add the taco seasoning as instructed on the package.
  2. Once the chicken is cooked, add it and all remaining ingredients to the crock pot. This will cook on low for 4 hours.

 

I found this to be delicious, a bit spicy but a new favorite for us.  My husband especially loved it, which he tends to be just as picky as my toddler, so it was a win for us!  The ground chicken was fabulous to work with.  It really saves a lot of time from shredding chicken and gave it a nice consistency.

    This looks so good! We love taco soup around here. I’ve never tried it with chicken but I love the idea of doing that instead of beef. I always add some dry Hidden Valley Ranch seasoning to mine, as well. The rest of the ingredients vary depending on what is in the pantry. We are getting another snowstorm today so I may have to make a pot of this later. Have a great Tuesday! Candace

      I love the idea of using the dry ranch mix! Hope you don’t get too much snow!!! Enjoy the soup!

        The ranch dressing mix seasons the soup up in a wonderful way! Just got up and we already have about an inch. We are under a winter storm warning until mid-morning tomorrow. We will need lots of yummy hot foods to warm us up. Take care! Candace

    I like this idea I will have to try it with ground turkey, it’s a
    little hard to find ground chicken Looks good and thank you for sharing this.

      The ground chicken can be found at many Target stores; however, I am sure it will taste just as good using turkey!!

    I have seen so many Taco Soup recipes lately and can you believe as much as I LOVE soups I have never tried making it? I will be trying this soon now that you have simplified it for me. Thanks.

      I didn’t use ranch seasoning in this one just taco seasoning. Any post that does have a packet of ranch seasoning though is equal to .4 oz. Thanks for stopping by.

    When I make taco soup, I sub chunky salsa for the tomatoes. I like the idea of adding the ranch, and will try it this week since I’m making taco soup for a ladies gathering at church.

    May be a silly question, but do you add the joices from the cans of beans?

      Not a silly question at all, I usually do pour in the juices, you don’t necessarily have to but I always felt like it just added to the flavor.
