Slow Cooker Chicken Taco Soup
Immediately after making my Slow Cooker Taco Soup, I knew that this recipe would be showing up on our menu plan frequently. It is one of my husband’s favorites, and he likes very few soups.
This time I decided to change it up a bit to use Gold ‘N Plump Ground Chicken instead of beef.
- 1 lb Ground Chicken
- 1 Package of Taco Seasoning
- 1 15oz Can Northern Beans
- 1 15oz Can Black Beans
- 1 14.5oz Can Diced Tomatoes with Green Chilies
- 1 14.5oz Can Chicken Broth
- 1 Cup Water
- 2 Cups Frozen Corn
In a large skillet cook the ground chicken and add the taco seasoning as instructed on the package.
Once the chicken is cooked, add it and all remaining ingredients to the crock pot. This will cook on low for 4 hours.
I found this to be delicious, a bit spicy but a new favorite for us. My husband especially loved it, which he tends to be just as picky as my toddler, so it was a win for us! The ground chicken was fabulous to work with. It really saves a lot of time from shredding chicken and gave it a nice consistency.
