One of my husband’s favorite items to eat for breakfast is a Sausage and Egg Biscuit. I decided that I would make an alternative to this using English Muffins.
Ingredients:
- 4 English Muffins
- 2 Eggs
- 4 Sausage Patties
- Servings: 4 Sandwiches
Directions:
I start by cooking the sausage patties in a skillet. In a rush for breakfast? Use the precooked sausage patties and heat them in the microwave. I actually prefer the turkey version, much less grease and fat than the real sausage!
Next, I beat the eggs and begin to cook them in the skillet. I usually cook these similar to an omelet and making sure that they cook on both sides. Once the eggs have cooled, I cut them in 4?s to have egg for each muffin.
Finally build the sandwich, topping the muffin with the egg and sausage.
Start the morning off right with a delicious breakfast sandwich!
















I just found your blog and think it will probably become one of my favorites. I also do not like cooking but it has become my job. I’m working hard at it and am getting better. I hope to find inspiration from you. Here is a tip I heard but haven’t used yet that might work well with this recipe. If you microwave your egg in a prep bowl (the one I heard about was Pampered Chef but I’m sure there are others that are silmilar in size) it will fit on an english muffin like and Egg McMuffin. This might be especially helpful if you have to eat breakfast on the run. (If I haven’t tried it before then I will probably have to when I return to work this fall.)
Thanks for stopping by!!! Actually, that does work! My mom was telling me about that the other day, she even does omelets in the microwave by prepping the egg! Never had heard of it before, but def a good way to fix breakfast on the go.
