This recipe is one that I used to go over to my sister’s house just so I could eat. So, finally she sent me the recipe maybe so I wouldn’t come over so much? I hope not!
Ingredients:
- 16oz Rotini Pasta
- 1 Large Chopped Tomato
- 1 Green Onion
- 1 Can Sliced Black Olives
- 1 Green Pepper, Diced
- 1 Red Pepper, Diced
- 1 Cup Grated Cheddar Cheese
- Dressing:
- 1/2 Cup Oil
- 1 Tbsp Salt
- 1 Tbsp Garlic Salt
- 1 Tbsp Parsley
- 1/2 C Vinegar (or Red Wine Vinegar)
- 1/2 Cup Sugar
Directions:
Cook the pasta according to the directions on the box, then add in the veggies into the boiling water with the pasta to soften. Drain the pasta and veggies. Toss this immediately into the dressing and top with the cheddar cheese.
I typically let this chill in the fridge for a few hours before serving. I also like to add cubed ham, or pepperoni to give it a meat ingredient as well.
This is a nice, light meal! Enjoy!
