As I have mentioned in some of my previous fish recipes, I do not really care for fish. It honestly does not matter what kind of fish it is, I just do not like fish. I force myself to eat it however, and have found that the more I flavor it the more I actually enjoy it!
When I first saw the recipe for Parmesan Crusted Tilapia, I only saw the picture and knew that I was going to have to try this. Then, I looked at the recipe and realized that it used almost all the products that I have regularly in our pantry and fridge. Having this realization, it immediately found it’s way to our menu plan.
I fixed my Parmesan Crusted Tilapia just as instructed and it was absolutely amazing! My son who also does not like fish, ate every last drop of it. It was a miracle to not have to pick up all the fish that he had thrown on the floor, this time nothing was on the floor, he ate it all! I could not agree more with his reaction, it was delicious!
The only other change I made was that I fixed 1 cup of brown rice to serve this on a bed of rice. Then, I had extra breading left over so I tossed the breading in with mixed veggies and served that as the side.
This is a healthy, delicious dish that will make you ask for more fish please!

















My kids love tilapia, so this sounds great. I hopee I can figure out something to replace the bread crumbs for myself, though, since I need it to be gluten-free.

It’s very good, it would probably be good even without the bread crumbs. The Parmesan really gave it a lot of flavor!!
