Looking Ahead in 2012

Mommy Hates Cooking

Are you making resolutions this year?  I used to make them when I was a kid but let’s face it, I never actually kept them!  I stopped making resolutions and look at it more as goals that I would love to accomplish that particular year or things that I plan to do for the upcoming year.

Looking back at 2011, one of the biggest goals I had was to turn this blog into my business.  In August, I was able to quit my corporate job and focus primarily on my blog as well as the business opportunities I have had that stemmed from it.  In September, I officially established Mommy Hates Cooking, LLC.  As far as business goals go this past year, that was one of my biggest accomplishments, and I feel beyond blessed by reader’s who have stuck around for the ride!

My Goals for MommyHatesCooking.com in 2012:

  • I am going to continue to develop my baking skills and attempt new recipes in the baking realm.
  • I will try to add nutritional information to more of the recipes that I feature.
  • I am launching a new website in the early months of 2012 called, Food Allergy Eats.  This website will focus on recipes that are free of the Top 8 Food Allergens, it is very much under construction.  Also find it on Facebook at Food Allergy Eats.  Stay tuned for more details on this site.
  • I will be remaking some of my recipes that were featured when I first started this site and updating the pictures.  Although, I’m nowhere near where I want to be with food photography those early pictures make me cringe.  They must go for my own sanity.  I now know that the flash was never my friend.
  • I will be remaking the bagels!  Yes, for those who have been around from the beginning and read the post on my Bagel Failure…I said I would leave it to the experts.  I have decided I am conquering that one and I am going to make some really good homemade bagels!
  • I am hoping to write a second E-Book that will be featuring a large portion of my great aunt’s 100 year old dessert recipe collection.
  • I plan to build new partnerships and continue with those already built to bring you product reviews on various different foods.
  • I am going to be teaching Menu Planning classes locally in March and May, details to come for those interested.

For the most part I will be doing a lot of what I have been doing and hoping for continued growth in the next year not only for the site to grow but for my cooking and baking skills to grow.  It’s been quite the journey over the last few years, and I can honestly say I have cooked more in these last few years than I had in my entire lifetime.

I am always open to hear what you would like to see on my blog as well, any particular recipes?  More nutritional information?  I take all of these things into consideration as I want my reader’s to be happy and come back for more!

I have literally gone from burnt oven mitts to homemade meals, and I hope each of you continue to join me on my this cooking journey!

Weekly Recipe Rewind

Are you gearing up for a big New Year’s Eve party?  I would love to say that we are, but honestly I would be surprised if my husband and I even make it up until midnight on New Year’s Eve.  We just are not late night people and definitely not party people!  My idea of a good New Year’s Eve is being home with my husband having movie marathons and lots of good food!  There have been a few years and possibly this one that we head over to a friends house but we are still at ‘home’.

With that in mind, let’s look back at all the good food showing up on the blog this week.

Friday Favorite: Bow Tie Pasta Bake

Today’s Friday Favorite is Bow Tie Pasta Bake.  This is a basic pasta dish that’s enjoyed by the whole family!  This is one of my fall back recipes on nights when I’m really busy, it’s simple and makes a lot!

New Year’s Whoopie Pies

This past week, I was ask to shop the bake center aisle at Walmart then create a New Year’s dessert.  I already had in mind what I planned to make.  I wanted to do something simple, quick, and tasty since I have been baking so much for Christmas.

I have shopped the bake center aisle many times this Christmas season and I love it for a few reasons, mainly because it’s convenient and near the front of the store and secondly because all of the new merchandise is displayed there.

The day that I went in the store to get my supplies for the whoopie pies they were actually taking down the bake center aisle and replacing it with quick dinners such as tacos and sides to go with them as well as spaghetti with sauce and cheese to go with it.  I was still able to quickly find what I was looking for since the associates were in the process of moving all the items back to the baking aisle; however, I was sad to see it go too.

On this trip I picked up all my ingredients and then headed home to get started on the whoopie pies.  I would love to say that my husband and I have some type of extravagant party for New Year’s but really many times it’s rare if we even make it up till midnight.

Our typical New Year’s Eve is a movie marathon along with lots of good eats!  I know these whoopie pies will be perfect for our night in!  They would also be perfect if you do throw a big New Year’s party!
