After I made Ban-Apple Chocolate Chip Waffles, I knew that I would be able to modify the recipe to make many different varieties of waffles. That is how I made my blueberry waffles.
Dairy Free Blueberry Waffles
Ingredients:
- 1 2/3 Cup Rice Milk
- 1/2 Cup of Applesauce
- 2 Tbsp Water
- 1 Cup Blueberries
- 2 Cups of Flour
- 2 Tbsp of Brown Sugar
- 1 Tbsp Baking Powder
- Servings: 8 Waffles
Directions:
Start by preheating the waffle iron. Then, combine milk, applesauce, and water and whisk in the blueberries, flour, brown sugar, and baking powder. This will need to be whisk until it is a smooth consistency.
Continue making these by pouring a small amount of the mixture onto the heated waffle iron and cook until brown.

These turned out very well and I think next time I will add the 1 Cup of mashed banana to make Blueberry Banana Waffles!

Did you have a problem with these sticking to the wafflemaker? I am making these this morning for brunch and they do not want to pull off the waffle grid. Eek! Perhaps either spraying the wafflemaker with cooking spray or adding like 1/4 cup of light olive oil might help?!

I do not remember having a problem, but any time I do when making waffles, I always use the non stick spray. I usually will spray after every set of waffles into the maker. Then, I will leave it in there a few minutes after the green light comes on to be sure they do not stick at all.
