Note: Photo of Toni’s Roast Beef
The evening I fixed this I realized that I would not be home the following day. I would be eating with my grandma; however, my husband still needed dinner. What’s a wife to do? Cook in my sleep, that’s what! I pulled out my crock pot and put it on right before I went to bed. Throughout the night, I think the delicious smell that filtered through my house caused me to dream of dinner! When I woke up, dinner was ready, and I had cooked a meal in my sleep! Crazy, right?
Ingredients:
- 2 lb Beef Chuck Roast, thawed
- 1 Package of Onion Soup Mix
- 1 14.5oz Can of Beef Broth
- 4 Cups of Water
- 1 lb of Baby Carrots
- 4 Baking Potatoes, cubed
Directions:
In the crock pot, place the potatoes and carrots on the bottom, then put the roast on top. Pour all of the liquid over the roast and add the onion soup mix. I used 4 cups of water; however, you will want to use enough to cover the entire roast. I used a 4 quart crock pot.
This will cook on low for 8 hours.
The roast is tender and juicy and the whole dish melts in your mouth! This dish gave us 6 servings, making it very affordable.
Enjoy!

That sounds delicious! I love just throwing everything in the slow cooker and letting it do all the work.
