Over the past few months, I have been looking at hundreds of new recipes including recipes for toddlers. One idea I saw repeatedly was ‘Pea Pancakes’. My initial thought was, ‘I will never make my son eat those, they are green!’. However, that was before I became a mom of a toddler!
I put aside my disgust with the fact they are green pancakes and decided to give them a try. Truthfully, they were really good. Other than them being green, I could not taste the peas.
I used the Bisquick pancake recipe and then added the peas. I used 1/2 cup of frozen peas that I pureed. These were not runny like you may initially think, I think part of the reason was that I used frozen peas as opposed to canned peas. The frozen peas have a bit tougher texture to them. Be sure to microwave, steam, or let them thaw before pureeing them. I heated mine up in the microwave until they were soft.
My son loved these and had no idea he was getting a serving of veggies along with his pancakes! I enjoyed these just as much. Pea Pancakes will now be a regular meal in our household.
