Like I mentioned in my Fatty Foods post, my mom always cooked the most healthy version she could find of any given meal. This lasagna is the only lasagna I had growing up, and it is still one of my favorites.
Ingredients:
- 1 lb Ground Beef
- 1 Box of Lasagna Noodles
- 1 Jar of Spaghetti Sauce
- 1 Carton of Fat Free Cottage Cheese
- 1/2 Cup of Reduced Fat Mozzarella Cheese
- 1 Tsp of Garlic Powder
Directions:
Preheat oven to 375*.
In a skillet, add the garlic powder to the ground beef and cook until well done.
Cook the lasagna noodles as directed on the package, for this dish I used 8 lasagna noodles. It will depend on the size of your baking dish on how many you will need. I used enough for a 9 x 13 dish. There are ‘oven ready’ noodles which indicate that you do not need to boil them first; however, I have always had better luck with boiling the noodles first.
Spray a casserole dish, then put 1 layer of lasagna noodles on the bottom, top this with the meat, and then the cottage cheese. Finish it off with another layer of lasagna noodles. Lastly, pour the jar of spaghetti sauce evenly to cover the entire dish.
This will bake in the oven for approximately 30 minutes. Please note that if you do not cook the noodles first then it will be about 1 hour of cooking time.
Once the dish comes out of the oven, immediately sprinkle with cheese.
As a side with this dish, I added olive oil and garlic powder to a bag of frozen veggies and heated them in the skillet. We also had Texas Toast along with this meal.
This is a very easy lasagna recipe, since my mom did not like to cook either. I see where I got it from!
Note: Clarification on how I layered this, I did 4 noodles on the bottom, then the meat and cheese, then noodles on top. If you want to do the traditional 2 layers, do the meat on the bottom, noodles, then cheese, then more noodles on top. Thanks!

















My mom uses cottage cheese in her lasagna and now I do too. I never knew there was any other way to make it until I saw an episode on Food Network
I was the same way, just realized that others use ricotta and various types of cheese in it. Here I always thought it was just cottage cheese! I still prefer cottage cheese.
