Cornbread Okra

This is my favorite way to make okra.  It is not truly fried, so it may not be liked by all, but it is LOVED by me!  I am not really into fried foods, so this is a fabulous alternative to me.  It also helps that I grew up on okra made this way.

In the end it will not be fried and the breading doesn’t stick perfectly to every piece of okra, but it adds a nice texture and flavor to the okra.

    I LOVE LOVE LOOOOOOOOOVE fried okra! I am going to have to give this a try, I am sure my waist line will thank me for it. lol

      I LOVE fried okra too, it’s one fried food I could probably eat all the time. This is a good alternative for it, but every now and then I still give in to the real thing! :)

    I came across this recipe and modified slightly. I mixed the Jiffy mix as directed and added the okra and one whole onion coarsely chopped. I then cooked it in a muffin pan in the oven at 375 for 30 minutes. Really good that way. Sometimes I add some small fish chunks or some Tabasco sauce.
