This is my favorite way to make okra. It is not truly fried, so it may not be liked by all, but it is LOVED by me! I am not really into fried foods, so this is a fabulous alternative to me. It also helps that I grew up on okra made this way.
Ingredients:
- 1 lb of Okra
- 1 Box of Jiffy Corn Muffin Mix
- 1 Tbsp Olive Oil
- 1/4 Cup of Water
Directions:
In a large Ziploc bag, pour all ingredients in. Seal the bag and shake it up to coat the okra.
Spray a skillet with non-stick cooking spray, then pour the mixture in and start cooking on low. This usually takes me about 45 minutes to cook, and I constantly am flipping over the okra so that it does not burn too quickly. I usually cook until the breading is a bit brown.
In the end it will not be fried and the breading doesn’t stick perfectly to every piece of okra, but it adds a nice texture and flavor to the okra.

I LOVE fried okra too, it’s one fried food I could probably eat all the time. This is a good alternative for it, but every now and then I still give in to the real thing!
